A light but tasty frittata where you can still taste the goodness in each of the ingredients.
Inspired by a Marie Claire recipe where it was photographed in an enamel frypan. Still haven’t been able to find one but this works well in any type of small frypan.
This dish works best only when the freshest ingredients are used!
